ZESTY CITRUS TACOS


Reflect back to our Italian Orange chicken recipe a few nights ago....

Yummy right!

Pictures taken not so pretty but the dish itself is so good!

I'm all about being as useful and frugal as I possibly can...

Since I was grilling the chicken - I figured - might as well go ahead and cook enough for another meal!

Frugal Tip

Plan meals according to sales

Notice the chicken & orange theme this week...

...Yep both on sale


*less than 10 min to prepare

*cook till veggies are tender!

*slice already grilled chicken (4 chicken breast), tomatoes, onions & garlic

*add one can of green salsa, zest of one orange (I also garnished with sour cream-yummy!!) & juice of 1 orange


....also a low calorie meal depending of your sides and serving size of meat.

Approx 375 calories for 2 tacos

Servings size 8 tacos


 

 

 

Orange Italian Chicken

Delicious ---- Light--- Flavorful

Inexpensive--- Easy--- Healthy

Marinade for chicken breast :

(or any type of meat your prefer)

Fat free Italian dressing

Zest of 1 orange

Juice of 2 oranges

soak all day- grill or cook in oven in marinade






A cranberry/almond salad compliments the flavorful chicken with a side of sliced oranges.






Calories-oranges and marinade included: 280


TIP
This a great recipe to place on rice, fresh steamed green beans with toasted almonds and much more...

Easy Banana Puddin'



What you need:
3 Banana's
2 containers of cool whip
1 large box of vanilla instant pudding
Vanilla wafers
Milk

Directions:
Mix pudding with 2 cups milk and 1/2 container of cool whip.

Layer like this:
A little pudding

Banana slices

Whip cream

Wafers...

...layer again

and keep layering...

...more layering!

Now you're done!

Always finish with wafers on top...
it's pretty that way!





Raspberry -gag me- cobbler



You all know how I love to cook things up! Come up with new recipes, add a little this and a little of that and frankly most of the time it’s delish! I said most of the time-
 So here’s a recipe for ya... recipe is below…I mean way below.

Just keeping it real today because honestly this is most of our lives that we gals would consider normal!

You know that friend you have, every time you see her you think good grief, seriously, she’s dropped another 5lbs and looking smokin’. Then next time you all meet she’s whipped up some great dinner party without having to put an apron on and her kitchen mysteriously stayed spotless the entire time, her nails are neatly manicured she manages  to have her kids clothes ironed perfectly and her hair done everyday and when I say done I mean washed. All you can imagine is, can’t she just mess up one time? Come on she’s making us look bad! I promise she has, and she probably cried for days.

Aren’t there some days you actually try to pull it all off- try to be someone other than “you”? Trying to be “that” mom or “that” woman? Who are we trying to impress? Other woman by the standard they’ve set for other woman? Isn’t that what we do “lose our focus”? 

 I’ve come to realize there are days my nails will be chipped, judge me go ahead. My bed will not be made and yes, my children will walk out into this world with (gasp here)…wrinkled clothes. I have a junk room, junk drawers, at the moment a very junky laundry room. I’m waiting for the top of the dryer to cave in! A junk closet and at times very junked up floors!

It’s life.
 It’s my life and I love it.
I have a smelly Dog that I love and a boy cat named Debbie that’s really growing on me!
She purred, I liked it.

In the past I’ve looked at other “moms” and seriously believed they really had it all together living on Mayberry. Do you find yourself trying to mimic them or think you can do all they do, sometimes? Don’t do it, don’t even try, it’ll make you miserable, grouchy and yell at your hubs and he doesn’t deserve that. We are all made differently, with different character and talents. Use the one’s God gave you and quit trying to take someone else’s. I don’t have the talent for landscaping. I know. I’ve tried. It looked real pretty in my head. My husband really does have that talent, everything he does looks amazing. I know he can do it and it will be wonderful, so why would I even bother! Not to mention he needs to work on our front yard. J

I used to get so frustrated when I would do something and it didn’t turn out. I wanted to quit and would be so discouraged from one silly mistake. I find myself saying I just can’t do it. I’m not a baker or whatever the situation was. Well, we’re not perfect and praise the Lord we’re not because where’d the fun be in that! I do bake really good so why would I let a few mistakes stop me?

So remember there’s not a friend, woman or mom that is perfect or really has it all together!
Don’t let her fool ya-

This is for my dear friend Michelle!
She brought brownies to our kids school and told my daughter: don’t tell your mom I messed the brownies up because she’s like a great cook! Later on that day Michelle and I were texting and she told me about the brownies! My daughter said they were actually delicious, they just looked funny! Been there done that.

What makes this funny to me, the night before I decided to make a gorgeous raspberry cobbler.
 I did all sorts of things to that cobbler to make it tasty and the color of the topping was beautifully golden. It was a new technique.I burned 2 of my fingers. I tripped on the rug and just knew it was going to be a recipe worthy of sharing. I put a scoop of ice cream on the plate, dipped into that beautiful red color and plopped it on top of the vanilla ice cream. It looked divine. I blowed on the spoonful of steaming goodness and took a bite! UCK! GROSS! I looked around to see if anyone saw me spit it out and thought who made this crap, it’s disgusting!











The next day I saw a glass that said “I’m not perfect but I’m pretty darn close”!
 I laughed and laughed! My sister seriously didn’t think it was that funny. It was funny because sometimes, I think, man, I’m really good and then the “red barf cobbler” comes along, I have a bad run (I mean I didn’t do it), sleep pass the alarm, brake my foot goofing off, drive over a cement parking curb or forget to pack my daughters lunch.

At least Michelle’s brownies with delicious! Looks can be deceiving. My cobbler was pretty.

blueberry delight-

It's ok to bake from a box!
This is my favorite box muffin mix!
 This is my second and I can't tell to much of a difference. From Aldi's
 

Go by the directions on the box-and then you know we're going to change it up a bit
-ya ready?

I always replace the oil for butter-
 you don't have to they will still be yummy.
Butter keeps recipes from drying out and will stay moister longer!

DON'T DRAIN THE BLUEBERRIES!

You can also replace the water for buttermilk- I do it both when I have buttermilk.



add 1 teaspoon baking powder -for good luck :)


 Add one teaspoon cinnamon- if you Love cinnamon add 1 tablespoon
I don't love it so 1 teaspoon is good for me.
Add 1 1/2 teaspoons pure lemon extract!
This is why it's so yummy! Trust me-
The cinnamon flavors combined with the blueberries,
mixed in with some lemon- O yeah-
 now-while you're mixing if you have some helpers, butter and sugar your muffin pans.
 I wouldn't recommend if you're making these for company...
 but we weren't making them for company so it was allowed and laughed at...



 really this isn't necessary...
but neither is wearing shoes.
O wait- never mind!
Just eat the butter and relax-



 A good 1/4 cupful heaping over!

20 minutes

TIP: a friend shared with my hubby- Mix and put in oven before bed and set oven timer.
You will awake to fresh muffins and a marvelous smell!

Sarah’s Enchiladas

Enchiladas

Can you say...yum!

Boil Chicken- 4 Quarters
I prefer dark meat for its  flavor and tenderness.
4 Chicken breast can be used as well.

Cool and shred chicken
A great time saver is to boil and shred ahead of time.
Freeze and take out when you need it.
 Here's the easy smeasy part.
 Mix this tasty creme with the shredded chicken- so good!
(Of course don't forget to use a coupon when you grab this at the grocery!) 


 Add Cilantro! Super tasty-
About 3 tablespoons is what I use
I licked the spoon.


 Pour Green enhilada sauce in a dish for dipping.
2 cans

Like this-
After dipping in the wierd looking green sauce-
Fill soft taco shells with chicken mixture and wrap up.
Will make about 18-20
approx 2 packs of soft taco's


 Place enchilada's tightly in dish

\Unlike these-they are not tight enough :)
Thisis the example of what not to do-
but they're pretty...
 Add 1 can of red sauce on top
 Add 2 if you're a saucey eater.

Sprinkle tons of yummy cheese on top!
I like Mozzarella
- use what you like

 Add Cilantro on top to look pretty-
Bake 375 until bubbley and cheese is brown.
About 25 minutes



ENJOY!
 Recipe: serves 8-10
4 chicken quarters or chicken breast
2 packs of soft taco's
2 cans green enchilda sauce
1 can red enchilada sauce
1 tub of  santa-fe philadelphia cooking creme
2 cups Mozzarella cheese
Cilantro-how ever much suits your fancy
